Hey. Wait!!! It cannot be unlocked! Only jailbroken! Jailbreaking lets you run 'unofficial' apps and apply themes.

Is there a way to easily theme the Default.png of apps like we currently do with Icons in WinterBoard? If not, saurik should add this to the new version...

Yes you can.
E.g if you put a Bundles folder next to the Icons folder in your theme as such: Bundlescom.apple.MobileSMSDefault.png, your png image will replace the SMS app's Default.png
Check the winterboard thread to see the com.Apple.whatevuhhh for other apps.

You can also put them in Folder/MobileSMS.app (Or whatever app name)
Okay, so I tried this and then the AIM app broke... is this because I didn't convert the xml files back to binary again?
Which method did you use? If you used the Winterboard method, it shouldn't have broken. Try re-syncing the app. If you tried image replacement, you probably altered the app's contents. App store apps are a bit like nitroglycerine - jiggle them a little and they'll explode.
Excuse my ignorance, I'm very new to themeing.

If I downloaded a theme via Cydia and use it, and it has custom icons for AppStore Apps, do I still need to go through step 5 to 9 if I want to change those icons? Again, I apologize for such a newbie question

ermm, this is a really old and pre-winterboard process. This process should not be followed anymore as it will more than likely break your apps. I suggest using winterboard for themeing now. If you don't know how to use winterboard, please do a search, as it has been discussed several times. I suggest this topic be locked.
